Be a part of the early stages as we build the distillery and plant our field. Get access to reserve bottles, distillery and farm tours, and our first tastings when we open.

Palmeri is intentionally small—225 square feet, built around our custom still. A true nano-distillery, designed for precision, efficiency, and a hands-on approach to every batch.

We’re currently in the thick of the build—framing, plumbing, and electrical are underway, with the still installation coming soon.
 

And while the distillery itself is compact, the landscape is anything but. Twenty acres surround us—open desert, agave, and plenty of room to explore.

The build

This was the beginning! Spring of 2025 began with installing a septic system and selectively clearing the land to leave occotillos, yuccas, chollas, wildflowers, and the natural washes intact. Next we fenced our field and and began to plant baby agaves.

distillery

Palmeri's main building—the distillery. Oversized windows and doors are framed in, and you can start to see and feel the scale. The ceiling height will be 12 feet. on the left, co-founder Jascha finishes the framing from the roof before inspection.

The build

Nearly ready for inspection! Then Jascha and Bill get to work on plumbing and electrical. Handy having two co-founders with tradesman backgrounds!

The pond

Look at that view! The window from the distillery, frames our pond and San Jose Peak—in the spring, we are lucky enough to have a pond of wildflowers.

The farm

The Palmeri Pond! Looking West toward our agave field, and a freshly planted baby agave to the left. This variety, is our namesake: Agave Palmeri.
