Distillery

Palmeri is intentionally small—225 square feet, built around our custom still. A true nano-distillery, designed for precision, efficiency, and a hands-on approach to every batch.
We’re currently in the thick of the build—framing, plumbing, and electrical are underway, with the still installation coming soon.
And while the distillery itself is compact, the landscape is anything but. Twenty acres surround us—open desert, agave, and plenty of room to explore.

Palmeri's main building—the distillery. Oversized windows and doors are framed in, and you can start to see and feel the scale. The ceiling height will be 12 feet. on the left, co-founder Jascha finishes the framing from the roof before inspection.


The build

The pond
Look at that view! The window from the distillery, frames our pond and San Jose Peak—in the spring, we are lucky enough to have a pond of wildflowers.


The farm
