Palmeri is a working distillery and farm in Bisbee, Arizona—growing agave from seed, harvesting from the surrounding landscape, and distilling spirits that reflect the desert they come from. We produce small-batch spirits using locally grown ingredients, including a variety of native agave, botanicals, flowers, herbs, Hopi corn, and Sonora wheat.

It started with a cross-country move to Bisbee, Arizona. We were in awe of the agaves growing everywhere—wild, resilient, and integral to the landscape.
That moment sparked the idea for the distillery—and its name. What started as an observation has become something we genuinely love: growing, learning, and building something meaningful.
At 225 square feet, Palmeri is officially a nano-distillery. Not to worry, we have 20 acres outside the distillery to explore. We designed our distillery to be small, efficient, and centered around our custom still. We think it's just about perfect.
We’re in the early stages—planting, building, and bringing the distillery to life.

Palmeri Distillery sits a mile high among the Mule Mountains, where you can taste the desert. Our spirits include Desert Dry Gin, Century Spirit (our signature agave spirit), Citruse (our signature herbal liquor), Sky Islands Rum and Sonora Wheat Spirit—each made in small batches, each crafted with care to highlight ingredients.
We never use artificial flavors, bulk alcohol, or agave syrups.

Why agave?
Agave thrives where little else can—storing water, growing slowly, and developing over years in the ground.
In the Southwest, water matters. Agave requires far less to cultivate than traditional crops, making it a natural fit for this landscape.
As it grows, it also captures carbon—building biomass over time and contributing to a larger system rooted in the desert itself.
We believe plants like agave are more than ingredients—they’re part of a broader climate solution.
